Granola Crunch & Vanilla Bar Recipe [gf]
3 Cups Nuts & Stuff Muesli
80 g Butter
½ Cup Coconut Sugar (or just brown sugar)
1-2 Tbsp Honey
1 Tsp Vanilla Extract (or one Vanilla Pod, cut in half lengthways)
(Option – replace Vanilla with 1 ½ teaspoons of Cinnamon Powder)
  • On low heat in a small saucepan, place butter, sugar and honey
  • Slowly melt all ingredients, stirring regularly to create a smooth consistency
  • This should take about 10-15 minutes or until sugar has dissolved
  • Prepare baking tray with a layer of grease proof paper (15cmW x 26cmL x 4cmD)
  • Preheat oven at 200 degrees
  • Place NUTS & STUFF in a large bowl
  • When cooked, pour ingredients from the saucepan straight into the NUTS & STUFF bowl
  • Thoroughly blend all ingredients together, making sure to coat muesli well
  • Tip ingredients into baking tray, spreading evenly and packing firmly into the tray, with your hands or the back of a spoon
  • Bake in oven at 200 degrees for 20-25 minutes or until golden brown
  • Remove from oven and allow to cool on the kitchen bench for about 30 minutes
  • Refrigerate for around 2 hours
  • When firm, carefully lift out of the tray onto a large chopping board and with a large sharp knife, cut into your desired Bar portions
  • Keep refrigerated - will last for ages.
