Chocolate & Date Protein Balls Recipe [gf]
1 Cups Nuts & Stuff Muesli
12 Pipped Dates (Soak for 1 hour)
½ Cup Zest of an Orange or Lemon
1/3 Cup Organic Cacao
1/3 Cup Organic Shredded Coconut – for the mix
1/3 Cup Organic Shredded Coconut – for rolling
Small Pinch Salt
1 Tbsp Honey
1 Tbsp Coconut Oil
Makes 12 balls
Preparation & Cooking 1:30 Hours
  • Place dates in a bowl of water, cover and stand for 1 hour
  • Drain dates and pat dry with paper towel
  • Place Nuts & Stuff in food processor and pulse process for a minute or so, until crumble consistency is achieved
  • Set aside 1/3 cup of the shredded coconut for rolling the balls later
  • Add the remainder of the ingredients in the food processor and process until mixture comes together
  • Transfer to a bowl and stand for 20 minutes in the fridge
  • Place shredded coconut in a shallow dish
  • Press firmly as you roll a tablespoon of the mixture into a ball. Then roll the ball in shredded coconut to coat
  • Repeat to make 12 or more balls of even size
  • Place on a flat tray and refrigerate for 1 hour before serving
  • Keep refrigerated – will last for ages
